I made the Speedy Summer Hemp Salad last week and it didn't disappoint. It was so good, in fact, that I had a huge helping of it over a bunch of organic spring mix from Costco and loved it so much that I served myself a second huge bowl of it. My husband ate it just as is and said that it was good, I preferred it over the bed of lettuce. Either way, you can't go wrong. It was super yummy! But, as she states in the recipe, it's better if you eat this the same day.
I also made the Vegan Pumpkin Mac N Cheese. It hard to find a vegan mac and cheese that is close to the real thing. But, this was pretty yummy and I will most likely make it again. Kaiden loved it (as he dipped his noodles in mustard).

Sweet Potato Lasagna. If you haven't made this yet you are surely missing out. We are heading to my parents house to watch the Eagles game and enjoy some lasagna. It's heavenly. And not a lick of cheese to be found! I am bringing B-raw-nies for dessert. I have been dying to make this recipe. And just one taste of the icing has me super excited for dessert time!
Portabella and Eggplant stacks. I am going to modify this and probably top it with breaded eggplants that I have frozen and some goat cheese instead of mozzarella. I will probably also make a couscous or some other grain instead of grits. Just cause I am lazy and don't really feel like going to the store just for grits.

Grandma's Slow Cooker Vegetarian Chili and vegan pumpkin cornbread. Mama's in the mood for some chili and this recipe is a favorite of mine. I haven't made this cornbread before, but it sounds divine!
Refried bean toastadas. I have some frozen from a previous batch so it'll make for a quick dinner.
We have a garage sale this day and Kaiden's soccer as well. I am anticipating taking some of our monies earned in the garage sale and going out to dinner. So we'll see where we end up.
