Meal Plan-9/23/12

I made the Speedy Summer Hemp Salad last week and it didn't disappoint.  It was so good, in fact, that I had a huge helping of it over a bunch of organic spring mix from Costco and loved it so much that I served myself a second huge bowl of it.  My husband ate it just as is and said that it was good, I preferred it over the bed of lettuce.  Either way, you can't go wrong.  It was super yummy!  But, as she states in the recipe, it's better if you eat this the same day.

I also made the Vegan Pumpkin Mac N Cheese.  It hard to find a vegan mac and cheese that is close to the real thing.  But, this was pretty yummy and I will most likely make it again.  Kaiden loved it (as he dipped his noodles in mustard).

Here's this weeks meal plan:

Sweet Potato Lasagna.  If you haven't made this yet you are surely missing out.  We are heading to my parents house to watch the Eagles game and enjoy some lasagna.  It's heavenly.  And not a lick of cheese to be found!  I am bringing B-raw-nies for dessert.  I have been dying to make this recipe.  And just one taste of the icing has me super excited for dessert time!

Portabella and Eggplant stacks.  I am going to modify this and probably top it with breaded eggplants that I have frozen and some goat cheese instead of mozzarella.  I will probably also make a couscous or some other grain instead of grits.  Just cause I am lazy and don't really feel like going to the store just for grits.

Speedy Summer Hemp Salad over greens.  I can't get enough of this right now.  So yummy!

Grandma's Slow Cooker Vegetarian Chili and vegan pumpkin cornbread.  Mama's in the mood for some chili and this recipe is a favorite of mine.  I haven't made this cornbread before, but it sounds divine!

Refried bean toastadas.  I have some frozen from a previous batch so it'll make for a quick dinner.

Veggie Pizza.

We have a garage sale this day and Kaiden's soccer as well.  I am anticipating taking some of our monies earned in the garage sale and going out to dinner.  So we'll see where we end up.

Meal Plan 9/18/12

Alright, Tracey, pull yourself together.  You can do this.

Is it me or has my life gotten extremely crazy?  Like more so than ever before.  I mean, I have felt that way ever since becoming a mom 5 (almost) years ago but lately it seems like I really can't keep up.  It's insane.

Although I manage to pull together some sort of meal most nights, I certainly need to meal plan.  Again.  I get that.  But even the task of meal planning sometimes can take too long that I just don't do it.  Here I am on a Tuesday realizing that there is NOTHING in our refrigerator to pull together a decent meal from.  I need to make a trip to the grocery store ASAP so I figured I throw together a quick (uh huh, yeah right) meal plan.

Individual pizza play date.  We are having some friends over to make individual pizzas.  I think that I might just roast up some veggies and throw them on a mcmuffin and call it a day for myself.  We ordered regular pizza last night (I totally forgot we were making pizzas for our play date today) since a friend was over from out of town.  I regret every cheesy bite I took.  I feel gross and bloated and like I need to detox myself.  Crazy how cows milk cheese affects me so much now.  Blech.  I see a lot green juice in my near future today.

Eggplant Parmesan.  I like to make up a bunch of eggplant to freeze left overs and throw on a sandwich for easy go to meals.

Veggie soup

Vegan Pumpkin Mac N Cheese.  I hope this is a hit, cause I have really been trying to find a vegan alternative to regular mac and cheese that my kids will like.  Fingers crossed.

Block party.  I'm bringing a side dish of hummus topped with cucumber, bell peppers, carrot shavings and goat cheese with pita chips.

I also want to make this summer hemp power salad to go along with something we are having or just for a lunch idea.  Oh, it looks DIVINE!

Phew.  I instantly feel better knowing I have some sort of plan in place for the next few days.  At least for dinners.  I'll be back on Sunday for next weeks plan!

First Day of School 2012-13

Here it is.  The first day of preschool 2012.  The last year of preschool for Kaiden before he ventures off to Kindergarten   *sniff*

We are doing afternoon preschool this year.  The jury is still out if we will like the new schedule, but I have to say it was kind of nice being able to sleep in.  And I found myself surprisingly calm as we got ready to leave the house after lunch instead of screaming and yelling like a crazy lady trying to shuffle kids out the door for 9:00 school (which we were inevitably always late for).  So, maybe this is a blessing in disguise.
